In China, I've heard of the famous Lanzhou noodles 兰州拉面, but

at the supermarket today there were many types of noodles named after provinces and cities.... I've heard of Beijing duck 🦆 but I've never heard of Beijing noodles.... Are these really the famous noodles in these places, or is it just nonsense?

  • 君墨

In China, every place has its own noodles, But not every place is famous for its noodles.Maybe it is just because of it😁😁😁

@mitchell In the 1980s, Hualong people began to push their noodle business to the whole country. At first it was called Qinghai Ramen, but later it was renamed "Lanzhou Beef Ramen" because Lanzhou beef noodles are more famous. Currently, there are nearly 40,000 "Lanzhou Ramen" from Hualong, Qinghai province, all over the country. Hualong Hui Autonomous County is a state-level poverty-stricken county with a population of 200,000, 1/3 of which cook ramen noodles outside. Last year, the army pulled 570 million yuan from all over the country, more than five times the county's public budget revenue.

  • mitchell Lifetime VIP

@尚竹郁 there are Lanzhou la mian restaurants every where in China.... But there aren't the other type of noodle restaurants all over China.... So it's quite peculiar
  • 尚竹郁

@mitchell I don’t think so 😄it might be famous in the north of China, but not famous in the south of China.most people of south don’t like noodles very much, but the north do. every place has its noodles,it’s just noodles .maybe it’s famous in your place?👀
  • mitchell Lifetime VIP

@尚竹郁 知道了, the point is why are Lanzhou noodles famous but the others such as Fuzhou noodles aren't famous....
  • 尚竹郁

Haha, not only Lanzhou province has noodles 😄
  • mitchell Lifetime VIP

@Anna again.... There are thousands of Lanzhou la mian restaurants in every city in China east to west...... North to south..... My main point was why are they so famous but the other noodles aren't nearly as famous.... There are probably 1000 Lanzhou noodle restaurants in Shanghai..... There is no where near that number of the Beijing noodles you are talking about in restaurants in Shanghai.... Same in Chongqing.... Same in Xiamen..... But there are tons of Lanzhou la mian noodle restaurants..... So my point is to examine why the Lanzhou noodles have so much popularity and business..... Yet the others aren't....
  • Anna

@mitchell Noodles might not be a very big deal in a lot of other cities especially in those eastern side of the country because there are plenty of other delicacy in their local food list while noodles are almost the real big deal in the food list of middle and west of China. Besides, you can check with all your Chinese friends if they think Lao Beijing Zhajiangmian老北京炸酱面 are famous in China:)
  • mitchell Lifetime VIP

@Anna I can see thousands of Lanzhou La mian restaurants in nearly every city in China..... Haven't had much luck finding Fuzhou or Beijing noodles all throughout China like Lanzhou la mian...... I didn't name it that, that's what they wrote on their restaurants.... Beijing duck is famous and everyone knows that.... But haven't heard much about the other noodles.... And I've been to all these cities and know locals..... No one ever mentioned those "famous" Fuzhou or Beijing noodles.... But everyone seems to always talk about the Beijing duck....
  • Anna

@mitchell If you think Lanzhou noodles is the synonym of Lanzhou Lamian, then Beijing noodles is the synonym of Lao Beijing Zhajiangmian which you must have heard of and it’s not less famous than Lanzhou Lamian.
  • mitchell Lifetime VIP

@Aria I like your reply. It's humble and honest. I would be glad to devote my time to helping you with spoken English. Thanks again for your humble reply.
  • mitchell Lifetime VIP

@Anna I get it..... You are superior and a more advanced race than us "foreigners".... We are just a bunch of stupid lao wai..... I get it.... Thank you..... The main question was simply, why are Lanzhou noodles so famous, but no one really talks about "Beijing noodles" or "Fuzhou" noodles....
  • Anna

@mitchell Well it’s common for a foreigner to be confused with so many subdivision of one type of food especially when the name translation of each on the label was so inaccurate. But as I mentioned in pr”my first comment here, the Chinese name on the packages you posted are recognizable for native Chinese. You might have heard of Yangchun Mian, Daoxiao Mian, Shougan Mian, Chen Mian, Dalu Mian, Youpolazi Mian, Hui Mian, Saozi Mian, Congyou Mian, Dandan Mian, Chongqiong Xiao Mian, Zhajiang Mian, Ban Mian, Chao Mian, Liang Mian etc. if you experience long and deep enough as you think you do.😜
  • Aria

Taste almost the same though.just close your eyes and foget about the different types of noodles which a chinese can hardly distinguish
  • mitchell Lifetime VIP

@Jason I'll have to visit there....
  • Jason

There are more than sixty kinds of noodles in ShaanXi.
  • Abby

    @mitchell My pleasure.
  • mitchell Lifetime VIP

@Abby thank you. For answering the question. Much appreciated.
  • Abby

兰州拉面 has a history of hundreds of years and was popularized very early。
  • Abby

They are different kinds of common noodles from different places, they are not as famous as 兰州拉面,and most of them don't have chain restaurants in China. But for me,whether noodles taste good or not depend on it's soup and ingredients,so most of them can be delicious too.
  • 北京Sophie

    兰州拉面和北京烤鸭……都是地方名吃。从这个角度好理解一点。上海水煎包,福州佛跳墙
  • 北京Sophie

    老北京炸酱面多有名啊!还有,过生日必吃打卤面!
  • 王继锋

    我在北京,没见过“北京挂面”, 但是挂面有很多
  • mitchell Lifetime VIP

@Anna it's funny because I've been to all those places in China.... And no one ever talked about Shanghai noodles or Fuzhou noodles.... All I ever hear is about the famous Lanzhou noodles.
  • 王欣

    其实这些都是挂面,我觉得它们的口感一般。我们经常去菜市场买面条吃,那种是用机器做出来的,软软的,有粗有细。
  • mitchell Lifetime VIP

@HT User840399 yeah, they actually have signs in their restaurants that say no alcohol. They said because they are Muslim hui people, so no alcohol.... Then I asked them why do the Muslim Xinjiang people sell alcohol in their Xinjiang restaurants😂...kind of ironic
  • HT User840399

When eating at a Lanzhou Ramen restaurant, remember not to bring anything to eat, especially wine. They don’t eat pork.
  • Lydia

    河南烩面比较出名,这些名字都是把外地人听的一愣一愣的,本地人气的一蹦一蹦的😂
  • mitchell Lifetime VIP

@Anna so in Fuzhou I should be able to find a restaurant with Fuzhou noodles, and the noodles are different from other noodles in China...., Right?
  • mitchell Lifetime VIP

    @Anna thank you
  • Alice Chen

The noodles are pulled to form by hand ! Just like an art!
  • Anna

    @wifier 显然我山东先人不做拉面。只吃普通手擀打卤面
  • Anna

@mitchell They are famous too but their actual name is not that simple. They are different types presented well with their Chinese name not the simple English translation. We don’t have the question because we can tell by their Chinese name on their labels but you don’t.😜 Another reason, there are so many Lanzhou Lamian Restaurants all over the world and generally speaking they were commercialized and standardized earlier and people like them. But the rest of the noodles are still being the minority in the domestic, and even in the global market.
  • mitchell Lifetime VIP

@Anna so there are actually Fuzhou noodles which are a specific style different from other noodles in China?
  • Alice Chen

If you visit Lanzhou , you will find , the soup is made in a very big pot, made from cattle bones, the local mosque style,
  • mitchell Lifetime VIP

@Simon puth haha..... Logical thinking 🤔
  • Simon puth

@mitchell because gansu and Qingdao province were poor. they creat Lanzhou noodles and many people from other China places love it so much,so it makes they rich to run restaurants throughout China. 😄i'm a university student in lanzhou.
  • Anna

So yes, they are famous for their origins and you got to figure it out by visiting and tasting them locally.
  • Alice Chen

@mitchell oh, Lanzhou noodles have the local colour
  • mitchell Lifetime VIP

@Alice Chen my question is not about cooking noodles or taste.... My question is why are Lanzhou noodles so famous but Shanghai or Fuzhou noodles aren't
  • Anna

@Kate Actually, the name with the locating information in the package makes sense since each of above posted is the typical type of local noodle. The problem is if you can tell the nuances as a outsider especially when the noodles were presented as standard products by manufacturers other than the delicacy made instantly by experienced cook.
  • mitchell Lifetime VIP

@Simon puth thank you for answering, so then why does everyone talk so much about Lanzhou noodles, but no one really talks about Fuzhou noodles or Henan noodles...? You see tons of Lanzhou noodle restaurants all throughout China, but why no Shanghai or Fuzhou noodle restaurants throughout China?
  • wifier

    作为一个山东人,没见过山东拉面😁
  • Alice Chen

All the food is delicious only when it is cooked and eaten。these noodles also can be made delicious. But they are instant noodles! They have a long way compared with the noodles in Lanzhou!
  • Simon puth

yeah, they are very common noodles but these logo (or brand, name)are truly from Chinese provinces or places ,you can Google in Chinese like 山西刀削面,上海阳春面,河南手擀面,兰州拉面
  • mitchell Lifetime VIP

    @Kate 😳
  • 时苏

    兰州拉面👍👍👍
