Das Ziel war klar: die große Flasche Rotwein verbrauchen und ein kräftiges, elegantes Schmorgericht auf den Tisch bringen. Die unbewusste Abweichung Doch dann kam meine Erinnerung an Budapest: Dort habe ich Gulasch gegessen, in dem immer Kartoffeln mitgeschmort wurden. Und gleichzeitig trage ich noch die chinesische Gewohnheit in mir: Auch zu Hause wird Rindfleisch fast immer mit Kartoffeln zusammen gekocht. Das Ergebnis: Ohne viel zu überlegen, habe ich die Kartoffeln automatisch ins Rezept aufgenommen. Damit war der Weg in Richtung „ungarische Küche“ bereits eingeschlagen. Die österreichische Küche als Zwischenraum Weil ich aber gerade in Österreich koche, habe ich typische Zutaten wie Kalbin-Schulterstück, Sellerie und Lauch (Suppengrün) benutzt. Das verleiht dem Gericht eine sehr österreichische Note – bodenständig, alltäglich, „wie aus der heimischen Küche“. Endresultat Am Ende entstand ein Mischgericht: · Nicht mehr reines Boeuf Bourguignon (weil Kartoffeln und Suppengrün den Charakter verändert haben). · Nicht mehr klassisches ungarisches Gulasch (weil der Rotwein und die Kräuterbasis zu dominant sind). · Sondern ein österreichisch gefärbtes Fusion-Gulasch, das irgendwo zwischen französischer Eleganz, ungarischer Bodenständigkeit und chinesischer Alltagsküche steht. Reflexion Ich merke: Dieses Gericht war gar nicht geplant als „Fusion“. Es ist vielmehr das Produkt meiner kulinarischen Erinnerungen – eine Mischung aus Kindheit (chinesisches Kartoffel-Rindfleisch), Reiseerfahrung (ungarisches Gulasch) und dem aktuellen Ort (österreichische Küche).
