I’ve recently discovered some food combinations that I didn’t know existed, such as dinuguan with puto and champorado with daing/tuyo (bulad for my Bisaya peeps). But there’s so many kinds of tuyo. They are Dalaguete, Cebu and Dumaguete in Negros Oriental province. [play audio for correct pronunciation] Although both cities’ names end in “-guete”, the difference in their pronunciations come from the respective origins from which their names derive. [first picture below explains these differences] From 2nd picture onwards: 1. San Guillermo de Aquitania Church - Dalaguete 2. Saint Catherine of Alexandria Cathedral belfry - Dumaguete 3. View from Lake Danao, the smaller of the two lakes of Balinsasayao Twin Lakes Natural Park; a 48-minute drive from Dumaguete. 4. View from Osmeña Peak. Its actual location is within the neighboring municipality of Badian; the trailhead can be reached from Dalaguete city proper within 20-30 minutes by habal-habal (motorized tricycle) ride. This bread is a Filipino 🇵🇭 merienda/meryenda (afternoon snack or light meal) called “kalihim” meaning “secret” or “keeper of secrets”. (Don’t ask me why it’s called that. I’m not so sure myself) It is also known as “pan de regla” meaning “menstrual bread” or “period bread”, attributing to the bright red jam it contains. The filling is bread pudding made from pieces of stale bread, mixed with milk, eggs, sugar, vanilla extract, and red or pink food dye to give it its characteristic color. The one I tried is rather sweet and differs from others I’ve seen because this one is filled with more jam and the breading is thin and the bread is roughly the size of a Fig Newton but a bit longer. Most pan de regla I see in bakeries can fit in your hand like a burger and often only contain a thin layer of jam.
