Quotation marks add a deeper meaning. "Interesting" doesn't just mean interesting, but "interesting" also means something interesting and a little strange. The emphasis is on the word "interesting." For example, let's say a geek is trying to show you something. If you reply, "That's 'interesting,'" it means that the thing is a little strange. Another example: "That guy is her 'friend.'" Is that guy her friend, maybe a romantic partner? In reality, Air Quotes are when people make quotation marks with their fingers while speaking. The words they use can have emphasis or other meanings. If someone moves their fingers like rabbit ears, that's an Air Quote. This is very normal!
