Eggs are hard to find. And even when you do, they’re too expensive. Which means cake is expensive too. And this weekend is my son’s birthday. When I asked him what kind of cake he wanted, he answered without hesitation. “Mommy’s cake.” And in that moment, I realized— I’ve made his birthday cake every year. The first time, it was because stores were closed during COVID. The next year, and the year after that, there was always something. And before I knew it, it became tradition. This year, I made a chocolate chiffon cake. If you’ve ever made one, you know— you don’t mix everything in at once. You fold in ingredients slowly, gently, checking as you go. It’s a bit like parenting. You add a little here, a little there, check if the egg whites form stiff peaks, make sure it’s not underdone or overmixed. Then you bake. You place it in the oven like sending a child into the world, and you hope. “Please rise.” “Please be loved.” But what about the parent? I wonder if the flavor changes a little every year. If each one is better than the last. As a baker, I think I’ve improved. I’ve learned that espresso powder and salt deepen the chocolate’s flavor. But there are still things I don’t know.
