Idiyappam / Noolappam, also known as string hoppers, is a popular and traditional South Indian dish, especially in Tamil Nadu, Kerala, and Karnataka, as well as in Sri Lanka. It is made using rice flour dough that is pressed through a special idiyappam mold to form fine, thin strands. These strands are then coiled into small nests and steamed until soft and fluffy. In some households, the rice batter is first steamed into an idli-like form and then pressed into noodle-like strands using a hand-operated mold. Idiyappam is light, gluten-free, and easy to digest, making it an ideal choice for breakfast or dinner. It has a subtle taste, which makes it a perfect base to pair with a variety of side dishes. It is commonly served with sweetened coconut milk, vegetable stew, coconut chutney, or spicy kurmas and gravies. In some regions, it is also enjoyed with sugar and grated coconut for a simple, comforting meal.
