We enjoyed a scenic 67-kilometer mountain drive through the fresh, vibrant greenery from Urabandai to Aizu. Our destination was Ōuchi-juku, a former post town that flourished during the Edo period. It’s a scenic spot lined with traditional thatched-roof houses. Our goal was to try the famous “negi soba”—cold soba noodles served with a whole green onion. Instead of chopsticks, you use the green onion to scoop up the soba and take bites of the onion as you eat. We dined on the second floor of one of the old houses, where we could see the wooden ceiling beams up close. The atmosphere was wonderful. It was a truly memorable experience.
