泉州姜母鸭(Quanzhou Ginger Duck),is a traditional dish which is very popular in my hometown: 福建 泉州市.(Fujian province Quanzhou city,a coastal city in Southeastern China, known for delicious sea food and historical ancient buildings) Just as the name of the dish,it requires duck meat,usually a whole fresh slaughtered duck,and needs plenty of Ginger slices,enough to completely cover the bottom of casserole😂,so I went to the market bought a fresh duck,the key is the cooking oil ,the traditional choice is seasame oil ,use small fire to decoct the Ginger slices until the moisture of the ginger disappeared and the color turned slightly brown,and smell comes out then put in the sliced duck meat,then put something like soy sauce oyster sauce salt、 pepper as seasonings ,use small fire to stew about 40 minute. I used to taste this in my hometown restaurant and my aunt's house,I thought it taste amazing so I learned to cook by myself.
