An attempt at cooking the famous Beggar's Chicken today! 🐔 Beggar's Chicken (乞衣雞) is a special dish from the Changjiang River's southern area(江南地區). It involves stuffing a chicken with various fillings, wrapping it in lotus leaves, and then baking it in clay. This cooking method makes the chicken super tender and tasty. Story of Beggar's Chicken Long ago, a beggar stole a chicken but had no tools to cook it. He wrapped it in leaves and mud and baked it in a fire. When he cracked open the mud shell, he discovered the chicken's distinct fragrance, taste, and tenderness. The chicken became so popular that it caught the attention of an emperor and eventually became part of imperial cuisine. Therefore, it also has an alternative name: "Rich and Noble Chicken" (富貴雞). This dish is not popular in Hong Kong or the Cantonese area, so I cooked like the beggar and ate like a king today. (There are many more ways that Cantonese people cook chicken.
