Hello English learners!
Today’s topic is “Santa Maria-style BBQ

!”

Santa Maria-style barbecue is a regional culinary tradition rooted in the Santa Maria Valley in Santa Barbara County on the Central Coast of California. This method of barbecuing originated in the mid-19th century when local ranchers would host Spanish-style feasts each spring for their vaqueros (cowboys). Santa Maria BBQ centers around beef tri-tip, seasoned with black pepper, salt, and garlic before grilling over coals of native coast live oak, or "red oak" wood. The grill is made of iron and has a hand crank that lifts or lowers the grill over the coals to the desired distance from the heat. The traditional accompaniments are pinquito beans, fresh salsa, tossed green salad, and grilled French bread dipped in sweet melted butter.

Three new vocabulary:
Culinary: to do with cooking
Accompaniments: side dish
Native: associated with a place

Question for you: does your hometown have a special bbq? Let me know in the comments!
