I don't know how the original recipe is made but I recommend you a lot to not using the rolling pin if the dough has yeast, because you gonna break all air bubles and the dough will be more difficult to eat. That's why Italians use hands instead of rolling pins when they make pizza 🙏.

@Danielo you are welcome! you could try to prepare the dough 2 days before and let it chill in the fridge. After 2 days, make little balls and let them chill in some warm place without wind and after 3 hours, extend them with your fingers and bake them 🙏 (I told you a similar recipe to make pizza)
