Last night I cooked a roast beef for 6. My son drove me to the
butcher’s but they ran out of rib of beef so I had to go for silverside which is lean but supposedly not as tasty as rib of beef. Anyway I lay it on a bed of carrots and onions in the roasting dish with a generous seasoning of herbs, mustard, pepper and salt. Much to my surprise it turned out out to be the most perfect piece of roast that I have ever cooked and everyone tucked into it happily, finishing off with apple crumble. I even burned my fingers in the process of removing the roast from the oven , a quick cold wash under the tap helped to stop the formation of blisters! 70
